Today is a work-free day for all civil servants and the weather is cool to welcome the new month, May. I thought of preparing something easy and time-saving and 'okpa' quickly came to mind and just within 1 hour, it was done.  So many road side hawkers have emerged and everyone is selling okpa. Mind you, not every okpa is real okpa; some are mixtures of okpa and other flours. So, be careful how you buy food on the road, expect you prefer the type that is mixed with flours like corn flour, bean flour, etc. Some hawkers add coloring to their okpa rather than use only fresh oil, probably to save money.
